OMG! I'm loving it!

I'm obsessing over this room. I love the combination of colors and that white and black striped duvet is killing me!!! I'm thinking about redoing my room like this. Granted I don't have as much light as this room does but I don't have to paint all the walls teal. We'll see!

Please try this! Very easy!

I made lunch for my parents today and decided to try a new recipe. I made it my own and it turned out fabulous! The recipe called for goat cheese, which I'm not a big fan of so I traded it for feta. I added a honey garlic glaze.

Ingredients:
  • Chicken breasts (1/person)
  • Fresh basil
  • Feta or goat cheese
  • Honey
  • Garlic cloves, chopped
  • Salt
  • Pepper
  • Dried basil leaves
  • Olive oil

Directions
  • Cut the chicken breasts through the thick of them, creating a pocket
  • Add salt, pepper, dried basil and chopped garlic. Rub
  • Drizzle some honey on chicken
  • Cover and refrigerate for 30 minutes
  • Stuff a mix of fresh basil and feta into the chicken pockets
  • Add more honey to coat
  • In a deep skillet add about 1/2 cup of olive oil until very hot and bubbling
  • Bring down to medium heat and add chicken.
  • Make sure you turn the chicken often to cook through both sides

I promise it is scrumptious!

Strawberry Vinaigrette

I tried this recipe last Sunday for my sister-in-law's baby shower and it was delicious! I had to tweak the original recipe to give it some flare-o-Meli and it was a big hit at the party.

Enjoy!

Ingredients
  • 1 cup balsamic vinegar
  • 1 cup red wine vinegar
  • 15 sliced strawberries
  • 1/4 cup of sugar
  • 3/4 cup of olive oil
  • 1/4 cup of diced onion

Directions
  • Boil balsamic and red wine vinegar and strawberries.
  • Reduce by 3/4 to 1/2 cup
  • Add sugar and diced onion
  • Simmer 10-15 minutes and cool
  • When cooled, gradually whisk in the oil

Add feta cheese to make it extra yummy!
