Please try this! Very easy!

I made lunch for my parents today and decided to try a new recipe. I made it my own and it turned out fabulous! The recipe called for goat cheese, which I'm not a big fan of so I traded it for feta. I added a honey garlic glaze.

Ingredients:
  • Chicken breasts (1/person)
  • Fresh basil
  • Feta or goat cheese
  • Honey
  • Garlic cloves, chopped
  • Salt
  • Pepper
  • Dried basil leaves
  • Olive oil

Directions
  • Cut the chicken breasts through the thick of them, creating a pocket
  • Add salt, pepper, dried basil and chopped garlic. Rub
  • Drizzle some honey on chicken
  • Cover and refrigerate for 30 minutes
  • Stuff a mix of fresh basil and feta into the chicken pockets
  • Add more honey to coat
  • In a deep skillet add about 1/2 cup of olive oil until very hot and bubbling
  • Bring down to medium heat and add chicken.
  • Make sure you turn the chicken often to cook through both sides

I promise it is scrumptious!

Strawberry Vinaigrette

I tried this recipe last Sunday for my sister-in-law's baby shower and it was delicious! I had to tweak the original recipe to give it some flare-o-Meli and it was a big hit at the party.

Enjoy!

Ingredients
  • 1 cup balsamic vinegar
  • 1 cup red wine vinegar
  • 15 sliced strawberries
  • 1/4 cup of sugar
  • 3/4 cup of olive oil
  • 1/4 cup of diced onion

Directions
  • Boil balsamic and red wine vinegar and strawberries.
  • Reduce by 3/4 to 1/2 cup
  • Add sugar and diced onion
  • Simmer 10-15 minutes and cool
  • When cooled, gradually whisk in the oil

Add feta cheese to make it extra yummy!

Lasagna Leftover Pizza

With leftover lasagna makings (half a tub of ricotta, half a pound of Italian sausage, a cup of mozzarella and half a jar of marinara sauce) what to do, what to do? PIZZA!

Get your hands on some pizza dough, store bought or homemade

From there divide the dough in half and freeze half for another day

Spread out the remaining dough on a non-stick pizza pan

Next brush on a liberal amount of olive oil covering the entire pizza
Spoon on leftover ricotta

Sprinkle on leftover sausage and mozzarella
Top with a dash of crushed red pepper, salt and pepper
Bake at 400 for 20-25 minutes
Heat up marinara and serve on the side for dipping.
Voila!

Bathrooms! Bathrooms! Bathrooms!

Aren't they fun? What used to be just a utility room has become the center of our relaxation rituals. Nothing better than having the space where you are the most intimate be beautiful and a reflexion of your personality!

A girl can dream!

My bathroom at my parents is t-i-n-y, so big open space bathrooms always catch my eye!

This was a note-worthy bathroom. Definitely points for originality and color scheme. Not a lot of storage room though!

Adorable and chic! I love chandeliers in bathrooms and claw footed tubs!

I would have gone with a lighter shade of pink but it's still a cool bathroom

Helloooo! Almost back!

I say I'm almost back because it will probably be another week before I'm really back. My friend Krsitin came to Honduras and we visited Nicaragua for a week with other friends and then we relaxed in the Bay Islands for 4 days. Liiiiiiittle addition? He ended up coming from St. Louis and traveling with us. Twist!

Needless to say I was considerably nervous about our encounter 7 months after the break up and it was more for me. Am I still in love? Do I still care enough to keep a relationship alive? Does he? Are we still gonna make this work? How? I damn nearly had a nervous breakdown. But my mom gave me a piece of wisdom that I thought would never leave her lips "Why do you have to make a decision now?". That did the trick! I was a lot more relaxed and a little braver.

I have to say having him here has been incredible. It feels like we picked up right where we left off. Just a tiny 7 month, painful and destructive bump. It has done my heart so much good. I felt lonely, misunderstood, out of place and he tidied me up.

Now he's sick, laying in my parents' couch with an IV in his arm because he's so dehydrated. Nothing serious! Just a bug he caught but most importantly he caught it on the day he was leaving so he decided to stay!! :D:D
